After the amazing turnout and response of the cheeseburger event I'm back again at Two Fellas for another round, this time to try and perfect the beloved Buffalo wing.

The Wings >>> €9
-Buffalo wings (or cauliflower wings)
-Blue cheese or ranch dressing
-Celery sticks

Chocolate chip cookies (Vegan) >>> €2

Want to hear the technical stuff?
This time around I'll confit the chicken wings in schmalz and butter to ensure that the meat comes straight off the bone, like a good wing should.
It will then be dredged in a spiced mixture of wheat, corn and potato flours to make it extra crispy before being deep fried to perfection.
After that they get tossed and coated in clarified butter and fermented hot sauce, which I will be making completely from scratch.
The sides will be a classic Gorgonzola based blue cheese sauce or home made ranch sauce with celery sticks (because vegetables).

The vegetarian option will be cauliflower wings which will get the same treatment, except for the confit of course.
